To make it even better, Executive Chef Giani was born and raised between a wood burning oven and a pasta machine in Tuscany, Italy. He uses the freshest organic, and locally grown ingredients. He insists on making everything from scratch. Literally everything like Fresh mozzarella and buratta cheese, sausages, cured and smoked fish, bread and pizza dough with its own secret starter.
Everything taste better homemade, and this kitchen is literally his home. He works 14 hours a day, 7 days a week running between farmers markets, grinding wheat grains to make his own flour, from the best butcher in town, his friend Harvey Guss, to the Santa Monica Seafood market, this guy never ends creating new dishes, a genius.
And if he didn’t stop, yet, by your table to say “Buon giorno!” you should shout a “Ciao Giani” to the kitchen and ask him to prepare something, off the menu, especially for you.
